LASER Talk: Lab to Table Conceptualizing the Future of Food
By the year 2020, the world population is on track to hit more than 7.5 billion people. With increasing disparities across regions in food access, waste, and farming, sustaining annual increases in consumption is inspiring researchers to explore concepts like lab- grown meat and genetically modified produce that can withstand extreme conditions. Conceptually, these solutions appear to fill a dire need, but how do they resonate psychologically with consumers? Speakers will be recruited from the UCI Sustainability initiative, and the department of Public Health, as well as professional artists.
